Pumpkin Soup

Fall is here and the leaves are beginning to change color slightly as the weather cools down. Warm up with this unusual soup made from pumpkins and chorizo. Pumpkins are native to Mexico and archaelogists have found seeds dating back 7000 BC. There are many uses for the pumpkin flesh and seeds including sauces and this Pumpkin Soup. For a creative presentation, hollow out several small pumpkins and serve the soup in them. It makes also makes a great addition to your Thanksgiving menu.
