Enchiladas

Enchiladas are a great meal to make ahead for busy weeknights. Prepare them as usual, cover and refrigerate up to 24 hours until ready to bake. Make extra and freeze as individual portions, then microwave them for a meal on the go. Enchiladas in Mexico are usually filled with shredded meat, cheese or a combination of the two and topped with a chile sauce. Of course nowadays you can find gourmet-style enchiladas with exotic fillings of wild mushrooms and baby spinach to mango and goat cheese. My favorites are always the originals, and these authentic recipes will be your favorites too.
