Add Some Green to your Diet with Salsa Verde

Tuesday January 31, 2006
salsaverde.jpg Red salsas get their color and flavor from red tomatoes. The redder and fresher they are, the better the salsa. Some red salsas also get color and flavor from red chiles. Salsa Verde (Green Salsa) gets its wonderful color from tomatillos, a distant relative of the red tomato, with a papery husk that must be removed before eating. The color and flavor is enhanced with roasted green chiles and onions. Grab your chips or tacos and top them with some of this zesty salsa.
