Chile Rellenos

relleno.jpg Green chiles have a wonderful warm flavor when roasted, which is perfect for a chilly evening. And when you stuff them with cheese, dip them in egg and fry them, the flavors and texture blend perfectly together. Queso fresco (fresh Mexican cheese) is a traditional choice for Chile Rellenos, but feel free to experiment with your own favorite cheese. You can even add shredded chicken or corn in with the cheese for some added flavor. Enjoy!
