All About Beef

Saturday April 22, 2006
beefcookedshreddedsmall.JPG Beef was not always available in Mexico until the Spanish introduced cattle in 1540. It was then used to make all kinds of dishes, and replaced some of the goat and lamb used. In Mexican dishes, the beef is either cooked and shredded, ground and cooked or used in large pieces such as steaks and roasts. Shredded Beef and Seasoned Ground Beef can be used as a delicious taco or burrito filling or used in Enchiladas or Tamales. A piece of flank steak makes great Carne Asada on the grill, which you can also slice up for fajitas. With so many options, you can't go wrong with beef.
