Yucatan dishes are always flavorful and unique. This pork dish of Poc-Chuc incorporates the traditional Yucatan flavors of sour orange and achiote. The pork is moist, tender and flavorful and topped with cooked onions and Chiltomate, which is a sauce of roasted tomatoes, chiles and onions. The dish may seem exotic, but you should be able to find everything you need at your local grocer or online.
