Enchiladas

One of my most popular recipes is for quick and easy Enchiladas which feature zesty red chile sauce and melted queso fresco. But there are so many other enchiladas to choose from! Here are just a few fabulous choices-

• Enchiladas Suiza- Stuffed with cheese, spinach and onion and topped with a creamy sauce and a green chile sauce.
  
• Enchiladas Verde- Chicken and cheese stuffed enchiladas with a tangy green chile sauce.
  
• Breakfast Enchiladas- Fluffy scrambled eggs, green chiles and melted cheese make these enchiladas tasty and satisfying for breakfast.
