Chile Colorado

Wednesday March 19, 2008
Chile Colorado- Red Chili with Beef

If you're tired of pot roast and potatoes, you have got to try this delicious Chile Colorado made with your favorite dried red chile pods. The flavor is hearty, yet complex, and the recipe only calls for a few ingredients. My favorite way to enjoy it is to fill up a freshly made flour tortilla with the meaty stew, then top it with some finely diced onion and cilantro, close my eyes and enjoy each layer of flavor and texture. Or you can eat it straight out of a bowl with a spoon and then sop up the remaining sauce with a tortilla. Any way you decide to eat it, you're gonna love it.

I also enjoyed this recipe and so did my family. The more recipes like this I cook at home, the less I have to order them in restaurants. Muchas Gracias Chelsie Kenyon.
