Gazpacho

Gazpacho Mexico's diverse cuisine has a strong Spanish influence and this soup is just one example. If you're in the mood for something light yet flavorful, try this chilled Gazpacho. It's a cool, seasoned tomato soup with chopped cucumber, onion, celery and jalepeno. Add some pre-cooked shrimp for a seafood version. It's great as a meal in itself or with a small Side Salad for a light and refreshing springtime lunch.
