Vegetarian Options in Mexican Cuisine

Fresh Salsa If you are a vegetarian you have many meatless options in Mexican Cuisine. Protein was scarce in native Mexican diets and most were sustained on meals of rice, beans, squash and corn. Those items are the staples of Mexican cuisine and can be enjoyed in many forms. For some ideas on what to enjoy without meat, try these crunchy Chile, Corn and Cheese Flautas or these sweet Apple Empanadas. An all-time favorite Mexican dish is Cheesy, Easy Enchiladas and they are very simple to make.
