Chile Colorado- Red Chili with Beef

If you're tired of pot roast and potatoes, you have got to try this rich Chile Colorado made with your favorite variety of dried red chile pods. This hearty recipe only calls for a few ingredients. My favorite way to enjoy it is to fill up a freshly made flour tortilla with the meaty stew, then top it with some finely diced onion and cilantro Or you can eat it straight out of a bowl with a spoon and then sop up the remaining sauce with a tortilla.
