  2. Place sugar and water in a small saucepan over medium heat.

  3. Stir water until sugar has completely dissolved. Turn off heat. Dissolving the sugar will create a syrup, which will ensure that the Popsicles have a smooth texture.

  4. Remove green tops from strawberries.

  5. Puree strawberries in a blender until they are completely smooth.

  6. Stir sugar syrup, strawberries, and Champagne. Use a whisk to ensure that ingredients are completely mixed.

  7. Fill Popsicle molds and freeze mixture until completely solid. This will probably take at least 2 hours.

  8. Unmold and enjoy, so long as you are over 21 years old.

Tips

  • If strawberries aren't in season, use frozen strawberries for this recipe. Defrost them so that you can puree and mix them with the other ingredients—they are every bit as good as fresh.
  • The recipe doesn’t call for straining the puree, but if you don’t want the seeds in your final product, run it through a sieve. Alternatively, leave your strawberries a little rougher and keep some pea-sized pieces of strawberries. These will be delicious once your Popsicles freeze.

Recipe Variations

  • Add a sprig of fresh mint to the water before making the sugar syrup and let it sit as you prepare the strawberries. This will infuse a hint of that fresh flavor into the syrup without being too obvious. You can even make the syrup ahead of time to let the mint infuse longer.
  • Strawberries are beautiful when paired with Champagne, but there are many other fruits that go well in this recipe. Instead of strawberries, try 2 cups of pureed peaches to make a Bellini-flavored ice pop. Blueberries are another great fruit to try, but feel free to experiment with your favorite combinations. You can use two different types of fruit if you can’t decide what would be best.
  • Some prefer fruit purees to juices for this recipe, but you can use 2 cups of orange juice in this recipe instead. Using juice will give your Popsicle a little icier, more solid consistency.
