Enchiladas Rancheras

What could be better than a cheese-stuffed tortilla smothered in a rich, tomato and chile sauce? Not much, really. And Enchiladas Rancheras are so easy to make with everyday ingredients you might even be able to whip up a batch tonight with what you have on hand. Also, they are cooked in a pan so you don't even need to turn on the oven.
