Breakfast Tacos

Why not have tacos for every meal of the day? Enjoy these tacos for breakfast and you can! This recipe makes 4 tacos.

INGREDIENTS:

  • 4 eggs
  • 1 cup beans
  • 1/2 cup salsa
  • 1/2 cup shredded cheese
  • 8 corn tortillas (you can also use 4 flour)

PREPARATION:

Warm the beans in a shallow pan over medium-low heat. When the beans are hot, make 4 divets in the beans with the back of a large spoon (similar to making a hole in the mashed potatos for gravy.) Break an egg into each hole and cover pan until eggs are cooked through. Warm tortillas by steaming them, or heating them on a hot comal. You can also fry them if you prefer a crunchier tortilla. Scoop out each egg with the beans around it, and place into the taco shell. (If using steamed corn tortillas, use 2 shells together) Top with cheese and salsa. Enjoy immediately.
