Chile Paste

Chile Paste is a great thing to have on hand when you want chile flavor, without the extra steps to re-hydrate the dried chile.

Ingredients:

  • 6 dried chiles, such as Pasilla, Ancho or New Mexico
  • 10 cloves of garlic
  • 1/4 teaspoon ground cumin
  • 1/4 cup vinegar
  • 1/2 teaspoon salt

Preparation:

Cut the stems off of the chiles with kitchen scissors. Cut a slit down the side of each chile and remove the seeds. Cut each chile into three or four pieces to make them easier to blend. Peel the garlic cloves. Add all ingredients into a food processor and process until a thick paste forms. Place in an airtight container and store in refrigerator for up to three months.
