Wonderful for tacos, burritos and enchiladas. Also great alone as a main dish.
Prep Time: 10 minutes
Cook Time: 6 hours
Ingredients:
- 1 large cut of beef (chuck roasts, bottom and top round or brisket)
- 1 jar of adobo sauce
- 2 cans of chipotle chiles and the liquid
- 6 cups of water
- 1 tablespoon oil
Preparation:
Heat oil in the bottom of a large saucepan. Place cleaned and dried meat in the pan. Brown on all sides. Stir adobo and chiles into water. Pour water carefully over beef. Add additional water until meat is completely submerged. Simmer for 6 hours over low heat, adding more hot water as neccesary.
Remove meat from liquid and place in a large bowl or serving dish. Pull off large chunks of beef to serve as an entree, or use two forks to pull and shred the beef.
You can discard the liquid or bring it to a boil until reduced to desired thickness. Drizzle over shredded to beef and toss to coat, or serve on the side for dipping.
