Savory Mollete- Toasted Bread and Beans

A quick snack that you can add a variety of toppings to make it sweet or savory. It is usually made with refried beans. Contrary to some reports, it is not a muffin.

Prep Time: 3 minutes

Cook Time: 5 minutes

Ingredients:

  • 1 Bolillo (Mexican Sandwich Roll)
  • 1/3 cup Refried Beans
  • 1/4 cup shredded queso blanco (or other favorite cheese)
  • 1/4 cup salsa or chile sauce (optional)

Preparation:

Bolillo Recipe

Preheat oven to 400 degrees. Split the bolillo in half lengthwise and spread beans on each side and sprinkle cheese on top of the beans. Bake in the oven for 4-6 minutes until the beans are warmed and cheese is melted. Remove from oven, add salsa or chile sauce if you want and enjoy.
