Quick Bean and Cheese Quesadilla

These yummy quesadillas are flavorful and so easy to make. You don't even need to heat the beans first. This recipe makes one quesadilla.

Ingredients:

  • 2 flour tortillas- medium sized (about 8-10 inches across)
  • 1/4 cup refried beans
  • 1/4 cup cheese
  • 1-2 teaspoons of red chile sauce

Preparation:

Warm your comal (you can substitute a griddle or other flat pan) over medium-low heat. Spread the beans evenly on one tortilla. (I like to use a rubber spatula to do this.) Place the tortilla, bean side up, on your comal and then sprinkle on the chile sauce. Evenly distibute the cheese over the top of the beans and place the other tortilla on top. Smash it down just a little so the top tortilla sticks to the beans. Lift the edge of the top tortilla to check if the cheese is starting to melt. As soon as it starts to melt, flip it over to warm the other side. When all the cheese has melted (approximately 4 minutes on each side) remove from the pan and cut into wedges. Serve immediately.
