Lime or lemon is usually added to Guacamole to help it resist oxidation, which can turn the dip brown. Lime is a delicious flavoring used in many Mexican recipes but is usually subtle in guacamole. However this guacamole recipe brings out the fresh and tangy lime flavor and is a nice change from your usual guacamole.
Prep Time: 5 minutes
Cook Time: 3 minutes
Total Time: 8 minutes
Ingredients:
- 4 ripened avocados
- 1/2 teaspoon salt
- 4 tablespoons lime juice
- 1 small clove of garlic, peeled and crushed
- 1/2 teaspoon chile powder
Preparation:
Cut avocados lengthwise around the seed. Twist the avocado halves and pull them apart. Hold the half with the seed and carefully tap the seed with a butcher knife one time so that the knife "sticks" in the seed. Twist the knife which should loosen the seed and pull it out. After the seed is removed, use a spoon to scoop the avocado flesh out and into a mixing bowl. Use a fork or potato masher to mash the avocado. If you like a chunky guacamole, then you won't need to mash as much. For a creamier guacamole, you can use a food processor or a stick blender to blend all of the chunks out. Add the remaining ingredients and continue to mash or blend just enough to incorporate all of the ingredients. Serve immediately with fresh tortilla chips, or use it as a topping for your favorite Mexican dish.
