Three Cheese Quesadilla

This ooey-gooey quesadilla will satisfy any cheese-lover and makes a great appetizer too.

Prep Time: 10 minutes

Cook Time: 8 minutes

Ingredients:

  • 2 large flour tortillas (burrito size)
  • 1/3 cup shredded Queso Quesadilla (substitute- jack)
  • 2 tablespoons crumbled Cotija (substitute- parmesan)
  • 1/3 cup shredded Chihuahua (substitute- cheddar)

Preparation:

Heat a comal over low heat. Place a tortilla on it and sprinkle the Queso Quesadilla and the cotija over the top. Place the other tortilla over the top and let it cook for two to three minutes or until the cheese begins to melt. Flip the quesadilla over and sprinkle the shredded Chihuahua over half of the surface of the quesadilla. Let it cook for one more minute and then fold the entire quesadilla in half over the Chihuahua cheese. Remove the quesadilla to a plate and let it sit for one minute. Cut into three or four wedges and serve with your favorite salsa.
