This chicken dish made with green chile sauce is a cinch to prepare. Not only is it easy to make but it's healthy too. Low-carb, low-fat and low-calorie... yet bursting with flavor! You can also substitute chunks of pork for the chicken.

Ingredients:
- 2 lbs chicken breasts, boneless and skinless
- 28 oz of green chile or green enchilada sauce (use canned or see the recipe for it below)
- 4 oz cotija or queso fresco cheese
Preparation:
Rinse the chicken and pat it dry with paper towels. Place the chicken on the bottom of a 9x13 baking dish. Pour the sauce over it and cook for 35-45 minutes (until it reaches 165 degrees.) Remove the dish from the oven and crumble the cheese over the chicken.
