This chicken dish made with green chile sauce is a cinch to prepare. Not only is it easy to make but it's healthy too. Low-carb, low-fat and low-calorie... yet bursting with flavor! You can also substitute chunks of pork for the chicken.

Prep Time: 5 minutes

Cook Time: 35 minutes

Total Time: 40 minutes

Yield: 4-6 servings

Ingredients:

  • 2 lbs chicken breasts, boneless and skinless
  • 28 oz of green chile or green enchilada sauce (use canned or see the recipe for it below)
  • 4 oz cotija or queso fresco cheese

Preparation:

Rinse the chicken and pat it dry with paper towels. Place the chicken on the bottom of a 9x13 baking dish. Pour the sauce over it and cook for 35-45 minutes (until it reaches 165 degrees.) Remove the dish from the oven and crumble the cheese over the chicken.

Really there is no way to specify a name of the chile, since chile names and types and breeds differ from region to region. One person might have poblanos available while another has hatch chiles available. They all work when green chiles are asked for in a recipe. I loved this recipe when I made it.
