Salsa Chicken

This recipe is so simple you will wonder what you ever did without it in your collection.

Ingredients:

  • 4-6 boneless, skinless chicken breasts or thighs
  • 2 cups of salsa
  • 3 cups chicken broth

Preparation:

Bring chicken broth and salsa to a boil in a large pot. Add chicken and simmer for 2 hours. If liquid evaporates to soon, add 1 cup of water. After 2 hours, all of the liquid should be evaporated leaving the chicken and thickened salsa. Use 2 forks to shred the chicken. Serve in tacos or make a burrito with rice and beans.
