Turkey and Corn Soup for 2

A quick and easy soup, perfect for a chilly day and a perfect use of your leftover turkey.

Prep Time: 5 minutes

Cook Time: 20 minutes

Ingredients:

  • 2 14ozcans vegetable broth
  • 1 tablespoon oil
  • 1/4 cup onion, chopped
  • 1 clove garlic, peeled and chopped
  • 1 tomato, seeded and diced
  • 1 tablespoon oregano
  • 1 tablespoon chile sauce
  • 1/3 cup corn, fresh or frozen.
  • 2 cups leftover turkey, shredded into bite-size pieces.
  • 4 tablespoons cream (optional)

Preparation:

Saute onions and garlic in oil. Carefully add in vegetable broth, turkey, tomato, oregano, chile sauce and corn. Bring to a boil, then bring to a simmer for 20 minutes. Stir in cream immediately before serving. Spoon into bowls and enjoy!
