Pollo

Definition: "Chicken"

A type of poultry used in many Mexican dishes such as tacos and green enchiladas.

It can be boiled whole and the chicken removed to be used for other dishes. It can also be grilled or baked.

Chicken comes whole, or you can buy pieces separately. The breasts and wings are considered white meat and have a very mild flavor. White meat tends to be a little dry so be careful not to overcook it. Thighs and legs are considered the dark meat due to the darker color of the meat. There is more fat in the darker meat and it has a much stronger poultry flavor.

Breasts are excellent for stuffing and wings are great marinated and fried. Thighs and legs are great on the grill or baked in the oven.
