This recipe is for a single serving, so adjust as needed.

Ingredients:
- 2 medium flour tortillas
- 1/2 cup oil
- 1/4 cup refried beans
- 1/4 cup cheddar
- 1/4 cup ground beef or chicken, seasoned with Mexican spices (see below,) and cooked
- 1 tablespoon green onion, chopped
- 2 tablespoons taco sauce
- 1/8 cup tomatoes, seeded and diced
- dollop of sour cream
Preparation:
Warm the beans and meat together in a pan over low heat or in the microwave. If you are using canned beans, you may want to thin them out with a spoonful or two of water. Carefully spread 1/2 of the meat/beans on one of the tortillas. Top the mixture with the other tortilla.
Spread the taco sauce on the top of the filled tortillas. Add the cheddar to the top and heat under a broiler until cheese is melted.
Sprinkle onions and tomatoes on the top of the melted cheese and serve with a dollop of sour cream.
*Seasoned beef or chicken- This recipe is perfect for leftover taco meat. But if you're making it from scratch, add 1/4 tsp of cumin 1/4 tsp of oregano, 1/4 tsp of chile powder and a pinch of salt to the meat while you're cooking it.
