5-Minute Salsa

A perfect topping for fish or chicken this refreshing chilled salsa will dazzle your taste buds with tangy tomatoes and spicy jalapeno. And the best part is that it only takes 5 minutes to prepare.

Prep Time: 20 minutes

Ingredients:

  • 2 cans of fire-roasted canned tomatoes
  • 2 fresh jalapenos
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1/2 teaspoon salt

Preparation:

First you will need to fire roast the jalapenos. You can do this by placing them under a hot broiler for about 5 minutes, turning a few times until the skin is blackened. Or you can scorch the jalapenos on a pre-heated comal or griddle over high heat. Add all of the ingredients to a food processor and pulse until desired consistency. I usually pulse it between 3-5 times. Chill until ready to serve. Makes approximately 3 cups.
