Black Beans

This hearty recipe can be used as a side dish or a meal in itself.

Prep Time: 15 minutes

Cook Time: 3 hours

Total Time: 3 hours, 15 minutes

Ingredients:

  • 1lb uncooked black beans
  • 6 cups hot water
  • 2 cloves of garlic, peeled and finely diced
  • 1 serrano chile, seeded and finely diced
  • 1 sprig of epazote, finely chopped
  • 1/2 of an onion, diced
  • 1 teaspoon cumin
  • salt to taste

Preparation:

Rinse beans and discard any debris. Place beans in the bottom of the pot and cover with the hot water. Bring beans to a boil, then reduce to a slow simmer and cover. Simmer for about 2 hours. Add in additional ingredients and simmer for another hour, or until beans are soft and a broth has formed.

Serve beans with a slotted spoon for a side dish. Or, serve in a bowl with the broth and add in some cooked, cubed chicken and some salsa for a main dish.

I love these, I made them to take to a potluck this afternoon and they are soooo yummy! I added more piloncillo though, I wanted them sweeter. And to the other reviewer- I think ""salt to taste"" means to add salt to the finished dish as you like, not to add it in while cooking. You can't really taste the dish properly until it's done. All in all, another great recipe... can't wait to try more of them!!
