Pickled Onions and Jalapenos

Pickled onions and jalapenos are a wonderful topping for tacos or along side a main dish. They are tangy and spicy with a hint of sweetness from the onions.

Ingredients:

  • 1 tablespoon oil
  • 5 onions, peeled and sliced
  • 3 jalapenos, sliced
  • 1 teaspoon sugar
  • 1/4 cup lemon juice
  • 2 cups vinegar
  • 1 tablespoon salt
  • 1 cup water

Preparation:

Heat the oil in a large saucepan and saute the onions, jalapenos and sugar for 3-5 minutes or until the onions are a little translucent and slightly wilted. Add in the vinegar, water and salt and bring to a slow simmer. Remove from heat and move onions and jalapenos into a covered dish and refrigerate overnight.

To serve them, bring them to room temperature and use a slotted spoon to put some of the onions and jalapenos in a serving bowl.
