Plantains con Crema

A simple and delicious way to end your meal. Try this rich dessert tonight.

INGREDIENTS:

  • 2 plantains, sliced lengthwise
  • 1 tablespoon vegetable oil
  • 2 teaspoons vanilla extract
  • 1/2 teaspoon cinnamon
  • 1/8 cup brown sugar
  • 2 teaspoons water
  • 1/3 cup cream cheese, room temperature
  • 1/4 cup heavy cream
  • 3 teaspoons sugar
  • 1/2 cup raspberries or strawberries, fresh

PREPARATION:

Oil the bottom of glass baking dish. Place plantains, flat side up, onto oiled dish. Mix vanilla, cinnamon, brown sugar and water in a small bowl. Drizzle over plantains. Bake at 300 degrees for 30 minutes or until plantain is extremely soft.

Beat cream cheese, cream and sugar on low with an electric mixer, or use a wisk and mix by hand until smooth and well incorporated. Place 2 slices of a plantain on plate and drizzle with half of the cream topping and the fresh berries. Serve immediately!
