Selecting your Plantains

You will need 1 plantain per person, 2-3 cups of oil for frying and salt.

Here you see a yellow plantain and a blackened plantain. The blackened one is far too ripe and will be too mushy to be able to cut. The yellow one is just about perfect. It is just ripe enough to have a delicious flavor, while still being firm enough to slice.
