After a busy day at school your children may be ravenous for an after school snack when they return home. You don't want to spoil their appetite for dinner so make up one of these fresh snack recipes for a real treat for after school.

1. Traditional Fried Quesadillas

A crunchy, golden brown "quesadilla" made the traditional way by using an uncooked tortilla, adding cheese and toppings and frying it until crispy on the outside and the cheese is melted on the inside. You can make the tortillas in advance and store in the refrigerator until you're ready to use them.

2. Rolled Tacos

Just as the name implies, these are tacos that are rolled and fried which make them perfect for dipping in your favorite salsa or sour cream. You make them with chicken or beef.

3. Bunuelos

Fried balls of dough that are crunchy on the outside and soft on the inside. Roll them around in cinnamon and sugar and they'll be begging for more!

4. Pan Dulce

This decorated "sweet bread" is a perfectly light afternoon snack. Make up a batch on Sunday afternoon and have enough for the whole week.

5. Sopaipillas

These are more Mexican-American than traditional Mexican, but these light pastries are delicious either way. Dip them in honey or sprinkle them with cinnamon and sugar.

6. Nachos

These tortilla chips with beans, cheese and other favorite toppings are perfect for sharing. If your kids like to bring their friends home, this is a great after-school snack for feeding a table full of hungry kids.

7. Mini Tazas (Little Cups)

These mini tortillas are filled with melted cheese, beans and chiles. Your kids will love these bite-size little snacks.

8. Salsa

There is nothing better than fresh salsa and paired with fresh, homemade Tortilla Chips you have the ultimate after-school snack.
