For a Mexico theme use cazuelas (Mexican clay pots) filled with bougainvillea as a centerpiece. Use festive dishes with bright colors and add some candles in varied colors and sizes around the table to set the mood. Have Mariachi music playing in the background and you will feel like you've taken a vacation to Mexico.
1. First Course- Ceviche de Camarónes
For a nice presentation, place 4-6 slices of cucumber on a plate slightly overlapping eachother. Place 1/4 cup "Ceviche de Camarónes" on top of the cucumber. Garnish with a sprig of cilantro.
2. Bread Course- Bolillos
Line an interesting basket with a nice cloth napkin and serve the rolls in it.
3. Soup Course- Pumpkin Soup
Ladle the soup into shallow bowls set on plates. Drizzle heavy cream over the top in a design such as a swirl or a zig-zag. Float a sprig of parsley on the surface for an elegant presentation.
4. Main Course- Pibil Pollo
To serve the chicken, bring it out on a large platter and serve it at the table with your best serving utensils.
5. Side Dish- Mexican White Rice with Vegetables
You can also serve this at the table alongside the chicken. Spoon the finished rice onto a nice serving platter and garnish with a few sprigs of parsley on the side.
6. Dessert Course- Caramel Flan
Place the custard on a nice plate and garnish with a sprig of mint.
