Mexican loving Irishman

I wasnt born Mexican, But Cinco de Mayo is my birthday. My Mom always made Tacos for my birthday, and since she has passed, I now make them for myself and freinds. We often go to the local celebration in the square downtown. I really enjoy many things Mexican, and hope to be born there in my next life. Thanks for your column, Chelsie, I always look through it.

as a Mexican we celebrate by a round of taco salad, quesadilla, margaritas, and Spanish musica(music)

I still don't understand why this is even popular in the US. If I were to celebrate it though, I would think of some Pueblan stuff, rajitas sound very appetizing right now. I don't know how Pueblan rajas are. but I guess I'm just thinking about the poblano pepper haha.

Taco Bar

We like to set up a taco bar with family and friends with a huge assortment of all the favorite taco ingredients - everyone can customize their own taco to be just the way they like them - the kids love it.

Potlucks

Everyone has a different understanding of Mexican food. If the holiday falls on a weekday I invite all my co-wrokers to have a potluck and bring their favorite dish!

Yes we do serve Mexican food to celebrate Cinco de Mayo. We also decorate our table with festive paper flowers!
